Hi Zoe, Thank u again for sending me the water kefir. In Toronto it’s hard to find and thanks for uploading it in youtube, i had the chance to finally order them from u and received them in 4 days. @Suzie – you can strain and put the grains in an air-tight container and put in the freezer. Remember it may take some time to revive them afterward.
@Kristin – I’ll experiment with making Rejuvelac from quinoa and will let you know. For now I use only wheat Rejuvelac.

Hi Zoe! i finally got my water kefir grains:) They seem to be really fine after the first 3 butches and water kefir taste every day better. The only thing is that i ve noticed that their number isn’ t changed. Is this supposed to be ok? don t they have to double every day?

@Leandro – there is nothing wrong with your grains. Their growth depends on so many external factors such as temperature, location, type of sugars used, time of fermenting, etc. As long as they are fermenting your water, they are fine.

They are fine but i hope for an evident growth soon so i can make some experiments with other food. Now i m using mascobrado cane sugar and figs but i m planning to try demerara cane sugar and some molasses if my grains amount is the same in other two or three weeks.

Zoe i have another important question. I’ d like to try dried apricots and i’ ve found them at the organic store in my town. They are unsulfured and unsweeten but on the package i can read they are pasteurized with water vapour. My question is…is that ok? No problems for my grains? I know they would appreciate dried apricots a lot. Maybe pasteurization could make apricots less nourishing destroying minerals?

Hi Zoe,
When storing grains, if I choose to freeze them, would I rinse them thoroughly and drain really well or even dry a bit before freezing or do I just put them in a jar with a lid and freeze ? I love those little guys, want to do the right thing.

I ve found that molasses is too strong and i give them just a small small small amount. Then white raw cane sugar and a small small amount ov mascobado^^

Hi Zoe,
Thank you so much for our blog, video and everything else. I received my Kefir grains last week and have already done 3 batches. I follow your recommendation on using the dried fruits however I found out that I prefer to make simple Kefir water that I flavor once bottled.
I have been using strawberry and it tasted delicious and have another one in the fridge with apple and strawberry.
Can I keep the Kefir water WITH the grain in the fridge? I am going away for 2 days and do not want to find a Kefir vinegar upon my return. Will that kill the grain or will it simply slow down the process? Maybe you have a better recommendation.

The grains will last as long as you take good care of them. Though it’s different with everyone. If they die on you, you either got inactive grains or something happened that “killed” them along the way.
Palm sugar is necessary for adding additional minerals to the water. Cane sugar is too processed and has little nutrition for the grains to thrive. That’s why you add the palm sugar and the organic fruit.
NEVER USE HONEY! It’s antibacterial properties will KILL your grains, which are bacteria!
Only use plastic and wooden utensils with handling the grains. They should not touch any metal.

I wanted to know if Kefir is vegan or not. I was reading that kefir is derived from an animal and that water kefir is just non vegan kefir treated with waters and sugars. Is this true? While the exact origin of water kefir culture is unknown, it’s believed to be vegan and safe for vegan consumption. Unless you are using the grains to ferment dairy, there is no way they could contain any animal by-product. Many vegans consumer water kefir without any issues.

Lois, no, don’t. The grains need cane sugar for the majority and a high mineral sugar for the supplemental one. Use coconut palm sugar, Sucanat or raw sugar for the supplemental.

Hello,
I’ve had my kefir grains since last year and it’s not doing well. I’ve tried feeding it with organic molasses with white sugar but that didn’t work very well. I’ve rested it for a few days and it’s not multiplying. I started out with more than 5 jars and now only one at best?

Zoe, I’m starting to panic! My newly received grains aren’t fermenting.
I know you said the freezing weather wouldn’t affect shipping, but they’re just not working. I’m doing everything exactly as the videos show. Maybe they’re in shock or something? Any suggestions? Thanks!

Hi Zoe, I started my first batch of water keifer (grains I got from a friend) and I found your video. Thank you for posting about this. I’m looking for the pitcher you use. I found one that looks like it’s the same on Amazon, but a lot of people are complaining about the lid. Anyway, I’d love to get get one. Please let me know. Thanks so much!!!!

Greta, there could be an array of factors that may affect how well your grains reproduce. Let me first say that all kefir grains I sell are in perpetual fermentation state, meaning they are healthy, happy and consistently multiplying. The likelihood of them being “not good” is very small.
From time to time I get emails from customers who do not seem to be able to get successful results making water kefir. Here are some possible reasons:
- temperature of the room. if too cold, it would take much longer for the kefir to ferment.
- longevity of fermentation. you want them to be sitting and fermenting for at least 24 hours.
- the ratio of water and sugar to grains. it should be 1-1-1. if too much sugar or water, the kefir will ferment at different rate.
- and of course, the grains are living culture and may take some time to readjust after being in transit.
In any case, please refer to my manual for detailed instructions on how to care for your water kefir.

Hi Zoe, my mom gave me a batch of kefir about a month ago. All we were doing it washing it in tap water, putting some water in a glass jar and adding some light brown sugar (no exact amount) and letting it sit for 24 hours. It was fermenting but the water still tasted pretty sweet in my opinion. Anyhow, I would put the water in the fridge and drink within a day. I rinsed “my babies” in tap water and repeated the process. I used metal spoon but plastic strainer. Everyday it seemed that I would at least get another tablespoon of kefir. I kept all the kefir together and just added more water and sugar as the kefir grew. Just a few days ago I noticed that it stopped growing and that it is starting to kind of break apart. It is starting to taste flat. Are they dead? Can they be revived? What can I do to revive them so that I can start following your advice. Thanks. Sabrina M.

Is it possible for mold to form if the water kefir is left on the counter too long? Will this kill the kefir? Is there any way to revive them?

It is. You will most definitely kill the grains if you let them go unchanged for long time.
